Mixed Berry Cobbler

Mixed berry cobbler...Mm. who doesn't like a little something that's filling and sweet. Some cobblers have a cake like crust and some have a more heavier biscuit like crust. The recipe I am going to share today has a cake crust topping. This is a fairly easy recipe and there are many variations of flavors you can make.
I do not add any extra sugar to this recipe but what I do use is juice.
 When you take your first bite of this you will taste the sweet and a little tartness from the fruit (if your using frozen or fresh fruit). I think that is a great combination.  Sometimes when we eat desserts and they are overly sweet we tend not to even finish them. What's great a about cobbler is you can also top it with a little something creamy as well. Some suggestions for serving are a dollop of whipped topping, a scoop of vanilla ice cream, a drizzle of chocolate(for the chocolate lovers) and a dust of powdered sugar. You can serve this warm or at room temperature. I prefer a little warm so the ice cream starts to melt. Then you can see the cream flowing down the dessert but that's just my opinion.
You can use any type of your favorite fruit and additional ingredients like nuts. Just use your imagination. I have no pictures unfortunately to show. Sometimes I just get caught up in baking and forget to pull out the camera to take pictures. Make this cobbler to your liking and enjoy.
This recipe is made in a 13x9 casserole dish and serves around 9(depending on your serving size).

Mixed Berry Cobbler

Ingredients:

1 box (18.25oz) white cake mix ( I prefer Betty Crocker)
2 cups pineapple juice (I prefer Dole)
1/2 cup unsalted butter (melted)
6 cups frozen mixed berries( thawed or semi thawed,or your choice of fruit)
(Mine were semi thawed)

Preheat oven to 350 degrees.  Spray or butter a 13x9 casserole dish.
Place the fruit evenly in dish. Pour juice over fruit. Then spread cake mix over top of fruit evenly. Next pour melted butter over the cake mix evenly. Then bake for for 45-50 minutes.

Just a couple of notes though. You may want to place the dish on a cooking sheet in case of bubbling over.  I check my dessert about 20 minutes in to baking. If the cake mix looks dry in some areas then take a fork and lightly push it down in the fruit. It's almost like your giving it a little stir in different areas of the dish. Then continue baking. As in any recipe, once you start making it you get your own routine down on how you like it.  For serving size I used a large ice cream scoop. That way when it releases from the scoop into the serving plate you see the crust on top.
